Sweet chilli prawns on tagliatelle
Ingredients
Peeled & cooked prawns
1 red onion chopped
Coloured peppers of your choice diced
Sliced mushrooms
Peas
Cherry tomatoes halved
The greens of spring onions
Garlic
Parsley
Tarragon
1 tsp Peri peri powder
For the sauce
1-2 tbsp sweet chilli sauce (2.5 syns per tbsp)
Juice & rind of ½ a lime
Water
2 tbsp L.F natural yogurt
Method
Heat frylight in a wok/frying pan and fry off all the veg except the tomatoes. To make the sauce add about ¼ pt water (just so it doesn’t quite cover all the ingredients) then add chilli sauce and lime, garlic, parsley, tarragon, peri peri powder and natural yogurt and simmer for about 15 minutes. Meanwhile cook some tagliatelle to instructions. Then with 5 minutes to go add the prawns and tomatoes to the veg mix ensuring prawns are properly. Serve on the bed of tagliatelle
