Hi all My name is katrina, im 29 years old and I follow slimming world. Ive been doing slimming world on and off since I was 14 years old. This is my latest journey and currently im back up to almost 2 and half stone lost. I wanted to share with you all my food diaries so if you are struggling or just want some new ideas you could maybe get some inspiration from them and use them however you choose, if you choose to at all :) I have put my syn values in but please dont take them as gospel as you may have different measurements to me also I can get away with not syning some things but that is what works for me so just use them as a guide. Last nights dinner - sweet chili prawns on tagliatelle

Sweet chilli prawns on tagliatelle

Ingredients

Peeled & cooked prawns
1 red onion chopped
Coloured peppers of your choice diced
Sliced mushrooms
Peas
Cherry tomatoes halved
The greens of spring onions
Garlic
Parsley
Tarragon
1 tsp Peri peri powder

For the sauce
1-2 tbsp sweet chilli sauce (2.5 syns per tbsp)
Juice & rind of ½ a lime
Water
2 tbsp L.F natural yogurt

Method
Heat frylight in a wok/frying pan and fry off all the veg except the tomatoes. To make the sauce add about ¼ pt water (just so it doesn’t quite cover all the ingredients) then add chilli sauce and lime, garlic, parsley, tarragon, peri peri powder and natural yogurt and simmer for about 15 minutes.  Meanwhile cook some tagliatelle to instructions.  Then with 5 minutes to go add the prawns and tomatoes to the veg mix ensuring prawns are properly.  Serve on the bed of tagliatelle
